Divide the cauliflower into large florets and cut them in half. Roast on a preheated grill pan, cut side down.
Meanwhile, in a large bowl, stir together the oil, veggi masala and salt. Pour the grilled vegetables into the bowl and mix thoroughly with the oil marinade.
For raw foodists, the work is done at this point. Anyone who prefers the cauliflower softer should bake it in a preheated oven at 180°C for about 10 minutes.
Serve the cauliflower on a platter and top with mango and coriander if desired.
