Why these noodles are so special:
We have finally discovered organic quality soba noodles with a perfect buckwheat content of 29% and found them to be very good . With this proportion of buckwheat, the noodles have the best consistency. Too much buckwheat makes the noodles brittle. Depending on experience or season, the noodles are often served warm in a hot broth in winter (kake soba) and eaten cold with a dipping sauce (tsuyu) in summer (zaru soba). With our broths it is prepared super quickly and easily. The noodles are only boiled for 4 minutes and then quenched in cold water. As a side dish , thinly sliced nori leaves, spring onions and some wasabi are added to the noodles . SOBA are dipped in a separate bowl with Tsuyu sauce (consisting of soy sauce, mirin, dashi) and then slurped with your mouth. A healthy and light dish for the summer.
Tip : The cooking water from the pasta should not be thrown away. It is considered very healthy and is often used in cooking or served as a drink .
